Spaghetti Squash Pizza
Recently I took a Home DNA test to get an understanding of my what my body needs nutritionally, as well as, physically. I will be posting all of my results shortly, but I can share that after receiving my results, I realized I needed to concentrate on my nutrition.
Most of my dinners revolve around meat - chicken, steak, ground beef, etc. with a vegetable on the side. My goal is to implement some healthier options and allow the vegetable to be the focal point.
Since Rome wasn't built in a day, I found a dish that was a healthier option of a not so healthy meal! The dish is Spaghetti Squash Pizza. I thought this dish would go over well with my family because they love pepperoni and cheese. The only change to their diet was substituting the pasta for spaghetti squash.
I enjoyed the Spaghetti Squash Pizza, but my kids and hubby were not fans. The kids liked the pepperoni and cheese (of course), but not the spaghetti squash. Spaghetti Squash is definitely a flavor and texture you have to get used to, so if this is currently in your wheelhouse, this is a dish that is easy and somewhat healthy!
2 whole spaghetti squash
Freshly ground black pepper
Extra-virgin olive oil, for drizzling
1 cup chopped pepperoni
2 cups marinara
2 cups shredded mozzarella
