Easy Beef Stew
I purchased a crock pot years ago but I've honestly barely used it. I love the concept but I have a hard time getting my act together early enough and prepping dinner so far in advance. I was looking for some easy family friendly recipes a couple of weeks ago, when I stumbled across this beef stew recipe. My husband is not a fan of beef stew, as he feels that the meat becomes dry and chewy. I promised him I would make sure the meat was tender and moist and then I whipped out the crock pot. After using it for this recipe, I am really going (to try) to use the crock pot more. It was so easy prepping all the ingredients before the kids came home from school. Once the bus arrived, I was able to sit down with them and concentrate on homework and some family time. Before we knew it, dinner was ready!

2 pounds of beef chuck (cubed)
2-3 white potatoes, diced
3 cups of butternut squash, cubed
1 large onion, diced
1 cup of white mushrooms, sliced
2 whole carrots, diced
2 tbsp of extra virgin olive oil
2-3 cups of chicken stock
1/2 cup of flour
1 16 oz can of tomato sauce
salt + pepper
Season your flour with salt and pepper. Dredge your beef in the flour mixture until coated and shake off any excess flour. Brown your beef for about 3 minutes on each side. Once the meat is browned, add all of the ingredients to the crock pot, and cook on high for about 4-5 hours.
