What’s for Lunch?

I have the hardest time making healthy meal choices when it comes to lunch. When I am out and about, I find it so much easier to grab a slice of pizza and be on my way.

However, now that I am getting older, I am seeing the results of unhealthy eating habits. Example 1 - my brother has diabetes in his 40’s, and Example 2 - my mom has liver issues in her 60’s.

I want to make a change and I thought it could help you all as well! Feel free to use this page as inspiration and a guide for when you are trying to figure out your next lunch plan!


White Bean Caprese Salad

1/2 cup White beans, drained & rinsed

1/2 cup fresh mozzarella, cubed

1/4 cup cherry tomatoes, halved 

2 fresh Basil leaves

Drizzle of Balsamic Glaze

Sprinkle of Sea Salt

Spinach & Sweet Potato Salad

2 hard boiled eggs

1/2 avocado

1/2 cubed bell pepper

1/4 cup shredded red cabbage

1/4 cup of cherry tomatoes

1/2 cup roasted sweet potatoes

Chickpea Salad


1/2 cup chickpeas, drained & rinsed

1/2 avocado, sliced

2 cups spring mix, or romaine lettuce

1/2 cucumber, sliced thin

1/4 cup cherry tomatoes, halved 

top with your favorite dressing, I used Balsamic Vinegar
