Instant Pot - Picadillo

A couple of months ago, I posted a Ropa Vieja recipe in a Facebook Instant Pot group and several people had mentioned that the Instant Pot makes a delicious Picadillo dish as well. I decided to try it for myself and they were all correct!

I know I have said before how easy it is to cook with the Instant Pot but this is by far one of the easiest dishes I have ever made! The hardest part was dicing the onion and pepper!

This recipe is from Skinny Taste and I made very few changes to the original recipe. Below is the recipe I wound up using. Side tip - I served this dish with Tostitos Scoops which made it a big hit with my daughter!

Ingredients

1/2 lb ground beef

1/2 large chopped onion

2 cloves garlic, minced

1 tomato, chopped

1 teaspoon kosher salt

1/2 red bell pepper, finely chopped

2 tbsp cilantro

4 oz tomato sauce 

2 bay leaves

1/4 cup green olives 


Preparation

Turn on Instant Pot and select the Saute function. Season ground beef with salt and pepper and brown until no longer pink. 

Add onion, garlic, tomato, salt, pepper and cilantro to the pot and stir 1 minute. Put in olives, about 1 tbsp of juice from the olives, and bay leaves. Add tomato sauce and 3 tablespoons of water and mix well. Cover and cook high pressure 15 minutes and then do a quick release.
